Abstract
Neurogastronomy is an interdisciplinary field that examines how sensory experiences are perceived and processed in the brain. In recent years, neuroimaging techniques have played a significant role in understanding the neural foundations of individuals’ gastronomic experiences. This study focuses on the applicability of functional magnetic resonance imaging (fMRI), electroencephalography (EEG), and functional near-infrared spectroscopy (fNIRS) in neurogastronomy research. Within this framework, data were presented using the descriptive analysis method under a qualitative research approach. The findings indicate that despite limitations such as high cost, time, and spatial constraints, interest in neurogastronomy has increased in recent years due to its emergence as a novel research domain. Detailing the role of neuroimaging techniques in neurogastronomy research can provide the field of gastronomy with a neuroscientific perspective, offering both scientific and practical contributions to the discipline.
